The menu on the Main Dining Rooms don't change ever. This is to encourage you to spend money in paid dining venues; ie. the NCL way!
The menu on the Manhattan Room is better, but I don't think they have a Caribbean offering aboard. Best bet, is to pre-book the dining package.
