Why does it always seem that the riders are sitting unnaturally too forward from the saddle towards the front of the bike on these road kings, and their shoulders are too high because the handlebars are so high up?

That's how you have the most control over the motorcycle your weight forward centered over the motor gives you the least disruption to the balance of the motor and the most leverage to turn the bars lock to lock
