Yes and no in short answer. Bellow shake can be done on a digital accordion but while some have been somewhat successful I haven't heard a really good one performed compared to an acoustic accordion. And yes I play both but avoid bellows shakes on my Roland. The recorded flash drive backups can't be changed to a different key since they are a recording of past music. I knew Tony Lovello and heard him play a few times. The last was about 20 years ago. He has since passed away. He was a versatile and high energy power player but in the older style of playing which was more showmanship than top musicianship. He was able to perform bellows shakes on his acoustic accordion and was noted for being able to do that for an extended part of the song when most would be worn out ;-) I believe he also played electronic organ professionally. There are some TH-cam videos of his performances both as a youth and than more recently.
