Hey! I mention it at 8:09, the app is called Color Widgets. It comes with a lot of different widgets to choose from and I used the notes app. I like that you can customize the colors and the font. ;)
Hi! 👋The battery life was good on this one, I'm a power user as well. Constantly have my phone screen on and running games or scrolling social media. On average the battery lasted all day for me. From like 6AM to 10PM

Hi, you have to download the widget separately from the galaxy store. You just need to search for gallery widget. The developer name is listed as Samsung. Hope this helps 🙂
