just finished making this....didn't have any digestive biscuits (or graham biscuits), so I used Oreo's instead like in your Cherry Ripple Cheesecake recipe (but kept the coconut)....all parts taste amazing individually...can't wait until tomorrow when it's set.....btw - you get a lot more raspberry sauce than you need, but it's very good...not too sweet...going to serve that as an extra topping for my guests if they want extra to drizzle on their slice...and I am sure they will...thank you for the recipe ....update - delicious...but do not leave it out of the fridge for any longer than a few minutes....as long as that center is really chilled (I chilled for over 24 hours - had to reschedule the dinner) it is fluffy and smooth and beautiful....out of the fridge, and starting to cool down to room temp, it just falls into a heap...but still tastes sooo good
It being chilled immediately made me want to try it. Def going on my list to try! Though we dont have digestives or jamsetta here, maybe graham crackers instead? i'll have to order the other thing
Yep! You can replace the digestives with Graham crackers and the pectin with gelatine although I never tested it with gelatine so I’m not sure what the ratio would be. I’d try 1tbsp :)

This is a must try! But I’m nervous about the mascarpone - I tried to work with it once and it was a flop, it liquified when I was mixing it with cream - any tips?? BUT I need to try this! Yummy.
I get that, I was too when I first tried it but this is a tried and true recipe! If you want an alternative (same results through) you can use sour cream :)
