I've always had to make something from nothing at times. The kind of dishes you prepare give me new ideas that I've never thought of. This dish looks so good. I'm just missing the refried beans. Guess that's why I love your burrito in a jar.
I haven't had instant rice in the house in probably 30+ years. LOL Bunch of my friends are doing Mexican inspired dishes today. Your rice came out nice! Okay. I'd eat this up. YUM!
I've been making a Mexican rice dish similar to this for years, but mine uses salsa and a little chili powder, plus a can of Green Giant Mexican corn (undrained). Top with Monterey Jack or cheddar cheese until it melts. Yum! 😋
