Osaka Sushi - How To Make Sushi Series

  • Master Sushi Chef Hiroyuki Terada makes our Osaka Sushi plate and shows you the ingredients and how this is done. You'll need the oshisushi pieces to make this. These were originally made in wood over 250 years ago but today, they use plastic which makes it dishwasher safe and much more sturdier.
    In Japan, they mostly use Mackerel only but here in the States, we add layers of fresh tuna and salmon and top it off with Ikura and of course, 24k edible gold flakes.
    Plating is very simple; cut into six pieces, use fresh oba leaves under the pieces on a elongated plate and you're done. This plate is absolutely stunning in color and presentation. We hope you'll stop by and let us make one for you, or try it at home and impress all your friends and family!

    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on TH-cam.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992.     Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

    Incredible, a great idea to add tuna and salmon to that Osaka sushi. It's amazing to see the different types of sushi from different parts in Japan! Kudos to Chef Hiro, again!! Definitely will have to try this!

    This looks super delicious!!! Saba is a super tasty fish. The color of the layers make this dish look absolutely beautiful! And I love the color of the ikura on top as it really makes the colors pop, but also helps to give the dish a more complete look

    I've never had good mackerel sushi in the united states. It's never fresh. But It's amazing in japan. I used to think I hated mackerel until I had it the right way.

    With it being the festive season, here in Belfast, Northern Ireland the continental Christmas matket has arrived, this year a sushi hut has set up shop.     How do you keep the size and shape so consistent with the fish when you cut it? I've attempted before, and found it very difficult to keep the shape constant. Is it just a lot of practice?

      +Gary Smedley It's okay to leave food on your plate if you can't finish it. Sushi artists are very laid back about things like that. As long as it looks good and tastes good there should never be a problem between the chef and the customer. Sushi chefs love to see their customers smile. So long as you thank him/her and leave gratuity you are always welcome in a sushi establishment.

      They started this channel to promote their Menu and dishes, so i guess that they get the ingredients from the restaurant. Well at least the money, sometimes they buy it themselves, but the money is propably from NoVe. Hopefully that is right like this 😁😁

      there many of them. i just want to find with the same finish detentions your's has. visually it looks like l =150mm, w=55mm, anf h = 50mm

    Really nice fish mackerel fish is 1 of the fattiest fishes ever.. Hiro could you incorporate the skin of the fish in sushi as garnish or the base instead of rice or seaweed. probably lightly shallow frying the skin.. for me the fat content is soo succulent and crispy when fried.. im just saying hahah

      Azhou - when the rice is sticking to the blade you need to dip the knife into water. dont use too much water but as much as neccessary
