    Hi Paulette you would not believe the day I've had, I watched your video earlier but did not have enough time to comment, so let me do that now, When you slice into that sweetbread my mouth watered because I had not yet had breakfast. I am telling you give me a slice of sweetbread in the morning and I can go right through lunch time without being hungry, a bowl of oatmeal and I am hungry before lunch time, go figure lol.     I am watching with Harold. He just said that he knows I can do this. I laughed (I think I can too). Question- can I purchase grated coconut? I hope so … because I’m not likely to buy a coconut, crack it and grate it although Harold said he would do it if needed.

    Hi paulette usually use the rub in method for my bread using Mello Kreem and Glowspread . Very few times I
    I have done it like this when feeling lazy though. Think I will try the coconut oil instead of margarine or butter.

    Oh boy, baking every weekend? I dont know about that! lol That looks so good! You did such a great job with your detailed instructions. I really was smelling it through the screen I just wish I could taste it through the screen too lo THat coconut in the middle looked absolutely perfect! I love using the cherry juice too when I bake lol. I wish I had a fancy mixer lol. THis looks' so good Ms. Paulette!

    Hi Paulette, a friend of mine from ST.Vincent took me to a Bajan bakery in Brooklyn, NY and introduced me to Heavy coconut bread with a coconut filling in the middle of the bread and it didn't have any fruit in it, I fell in love with that bread, do you know what I'm talking about?I hope I remembered the right island that made this bread, if so that I remembered right would I just don't add the fruit or it is a different recipe all together, looking forward to your response 😀.

      @@pauletteroulhac3181 yes you can leave out the fruits if you want, as a child I did not like the fruits so when I started making it I left out the fruits, however I now use them. Growing up in a shop the sweet bread Bakeries sold had raisins in them and some people picked them out including me. These days people put in a mixture of fruits, in fact I find that Trinidadians use more fruits in theirs and call it Sweet Bread while Barbadians use more coconut and call it Coconut Sweet Bread. Fruits can be optional.

      @@EverythingPaulette I used to pick the raisins out of my Coconut Sweet Bread for years, even now the big Bakeries use only raisins, smaller ones may put cherries on top, home bakers may use a mixture of fruits. I do not like alot of fruits, I have made it without fruits, my coconut is what I like. I usually use raisins in the mixture and then put cherries on top, however next time I make it I will try a mixture of fruits.

      RECIPE:
      INGREDIENTS
      5 CUPS AP FLOUR + 1 CUP FOR KNEADING (SET ASIDE)
      3 CUPS OF GRATED COCONUT
      3/4 CUP BROWN SUGAR
      1 1/8 CUP EVAPORATED MILK (WARM) - (IF YOU HAVE COCONUT WATER YOU CAN USE LIKE A 1/2 CUP AND REMAINING MILK) OPTIONAL
      3 TBSPNS BP
      1/2 TSPN SPICE
      1/2 TSPN FRESHLY GRATED NUTMEG
      1 CUP ORGANIC COCONUT OIL (MELTED)
      1 1/2 TBSPNS VANILLA EXTRACT
      1/2 CUP GOLDEN RAISINS
      1/2 CUP GLAZE CHERRIES (QUARTERED)
      1/4 CUP MIXED PEEL
      COCONUT FOR THE CENTER (OPTIONAL)
      MIX TO WELL COMBINE AND SET TO THE SIDE FOR LATER
      1 CUP GRATED COCONUT
      2 TBSPNS BROWN SUGAR (OR TO TASTE )
      1 TSPN VANILLA EXTRACT
      1/4 TSPN SPICE
      1/4 TSPN FRESHLY GRATED NUTMEG
      DIRECTIONS
      IN A MEDIUM BOWL, SIFT FLOUR AND BAKING POWDER THEN ADD THE SPICES AND MIX WITH WIRE WHISK TO WELL COMBINED AND SET ASIDE.
      IN A SEPARATE LARGE MIXING BOWL, ADD THE SUGAR, MELTED COCONUT OIL, WARM MILK, VANILLA EXTRACT AND GRATED COCONUT AND MIX TO WELL COMBINED.
      ADD THE DRY INGREDIENTS IN HALF OR THIRDS AND MIX WELL TO COMBINED.
      AFTER ADDING THE LAST OFTHE DRY INGREDIENTS, ADD THE FRUITS AND MIX TO WELL COMBINED.
      TURNED OUT ONTO A CLEAN FLOURED WORK SURFACE AND KNEAD FOR APPROXIMATELY 5 MINUTES WITH ADDITIONAL FLOUR THAT WAS SET ASIDE.
      DIVIDE THE DOUGH AND SHAPE INTO LOAFS AND PLACE IN PREPARED LOAF PANS.
      BAKE BETWEEN 325º AND 350º FOR APPROXIMATELY 45-60 MINUTES OR WOODEN SKEWER COMES OUT CLEAN AND WELL COOKED THROUGH.

    Can I use butter or regular oil instead of coconut oil. What kind of coconut oil did you use. Also, can I use pre shredded coconut? Sorry for all of the questions.

      Hello Debra! First of all thank you so much for watching, I appreciate your support. Originally, I used to use the Crisco before I started using the coconut oil, any organic coconut oil would be good and I usually get that from Bj's; not sure if you are good with the Crisco but to be honest with you I have never made it with just the butter or regular oil. I would strongly suggest the crisco if not the coconut oil. Yes you can use the pre shredded coconut but you know fresh is best.       RECIPE:
      INGREDIENTS
      5 CUPS AP FLOUR + 1 CUP FOR KNEADING (SET ASIDE)
      3 CUPS OF GRATED COCONUT
      3/4 CUP BROWN SUGAR
      1 1/8 CUP EVAPORATED MILK (WARM) - (IF YOU HAVE COCONUT WATER YOU CAN USE LIKE A 1/2 CUP AND REMAINING MILK) OPTIONAL
      3 TBSPNS BP
      1/2 TSPN SPICE
      1/2 TSPN FRESHLY GRATED NUTMEG
      1 CUP ORGANIC COCONUT OIL (MELTED)
      1 1/2 TBSPNS VANILLA EXTRACT
      1/2 CUP GOLDEN RAISINS
      1/2 CUP GLAZE CHERRIES (QUARTERED)
      1/4 CUP MIXED PEEL
      COCONUT FOR THE CENTER (OPTIONAL)
      MIX TO WELL COMBINE AND SET TO THE SIDE FOR LATER
      1 CUP GRATED COCONUT
      2 TBSPNS BROWN SUGAR (OR TO TASTE )
      1 TSPN VANILLA EXTRACT
      1/4 TSPN SPICE
      1/4 TSPN FRESHLY GRATED NUTMEG
      DIRECTIONS
      IN A MEDIUM BOWL, SIFT FLOUR AND BAKING POWDER THEN ADD THE SPICES AND MIX WITH WIRE WHISK TO WELL COMBINED AND SET ASIDE.
      IN A SEPARATE LARGE MIXING BOWL, ADD THE SUGAR, MELTED COCONUT OIL, WARM MILK, VANILLA EXTRACT AND GRATED COCONUT AND MIX TO WELL COMBINED.
      ADD THE DRY INGREDIENTS IN HALF OR THIRDS AND MIX WELL TO COMBINED.
      AFTER ADDING THE LAST OFTHE DRY INGREDIENTS, ADD THE FRUITS AND MIX TO WELL COMBINED.
      TURNED OUT ONTO A CLEAN FLOURED WORK SURFACE AND KNEAD FOR APPROXIMATELY 5 MINUTES WITH ADDITIONAL FLOUR THAT WAS SET ASIDE.
      DIVIDE THE DOUGH AND SHAPE INTO LOAFS AND PLACE IN PREPARED LOAF PANS.
      BAKE BETWEEN 325º AND 350º FOR APPROXIMATELY 45-60 MINUTES OR WOODEN SKEWER COMES OUT CLEAN AND WELL COOKED THROUGH.

    hi you never say how much flour how much baking powder sugar butter salt and the rest of the ingredients to make the bread

    I tried this recipe and I didn't like the taste or texture, the bread was very dry and crumbly. I am bajan and I know a good sweet bread. This did not work for me. I've never heard of baking with coconut oil but was will to try an alternative. It needed something to hold the flour together other than coconut oil. I will try it again but will use either a bit of butter or Lard as well.
