Great show. Blackened fish melted butter brush on fish one side, cook that side first while it's cooking brush butter on top side season flip makes big difference. That's a great seasoning. I love cooking fish that way great fish tacos! Tight lines love the show! Pennsylvania!
Not a bad view from the office braddah. Freak accident on letting go of the leader but still having it whip around the thumb though. Loved the body slam on the mahi though. That "THUNK" was awesome hahaha

It has been a long time since you had Alicia starring in a catch and cook, really good to see her showing off her kitchen skills again. Great job Alicia!
I have cooked blackened fish at the firehouse quite a few times and everyone always loved it. We have a big commercial Wolf gas stove and 14” cast iron pans. I use two pans and put them on high heat till the inside of the pans start turning ash white, they are super hot! One pat of butter in each pan (no oil) and the smoke is instant and thick. Throw a fillet coated with blackened seasoning (I make my own) onto the smoking hot butter and flip the fish after about 1-1/2 minutes. Total cook time is about 3 minutes. The 3 fans in the exhaust hood are on high but they cannot keep up with the smoke. The windows and doors are open and from outside looking at the fire station it looks like we have a kitchen fire going. So messy and smokey but oh so good! I serve it up with a side of forbidden (black) rice, steamed mixed vegetables and a salad. The cook (me) is not allowed to help with clean up but with 8 guys at the firehouse everything gets squared away quickly. My wife only let me cook it at home once. She did not like the smoke or the mess.....And since the firehouse rules don’t apply at home my wife made me clean up the kitchen! Who’s the boss anyway. ;-)

Hey, howzit? Did you know you're suppose to have the citrus you want to squeeze be facing rounded side UP when using one of those squeezers. You used it wrong way, all kapakai upside down which is why you're getting squirted all over. No pilikia when using rounded side upward facing the squeezer.
