Making delicious Fish Biryani - with Baby hake and boiled eggs

  • Fish biryani can be a more complicated recipe to follow but the reward at the end is delicious enough to make it worth the trouble.
    Requires some preparation as well as simultaneous steps. Follow along as I use baby hake that we got, but the process for any other fresh fish will be the same.
    Ingredients
    800g frozen baby hake
    To marinate the fish
    2 tbs oil
    1 tsp mixed masala
    1 tsp soy sauce
    1 tsp fine salt to taste
    Crack of black pepper
    Sprinkle of mixed herbs
    Splash of lemon juice
    For Biryani "curry"
    3 medium tomatoes grated
    1 medium onion, grated
    3 green chillies
    Biryani mix - cinnamon sticks, bay leaves, star anise and fennel
    4 cloves of garlic sliced
    1 tbs mixed masala
    1 tsp hurdee (tumeric)
    1 tsp salt
    1 cup biryani dal (brown lentils)
    1/2 cup frozen peas
    The left over marinade from the fish
    1/2 cup of the oil used to fry the fish
    1/2 onion for garnish - fried in 1/2 cup oil
    4 eggs, boiled
    Dhania to garnish
    2 cups par cooked rice (follow steps in chicken biryani recipe)
    Best served with dhal and salad or sour milk salad. Will serve up to 6-8 people but can also be kept in the fridge because it will definitely taste better the next day!

She cooks from the heart, one can both see and hear the authenticity of old school cooking in her action and voice. To those reading this remember that our cooking methods are slowly ebbing away, mother is one of the last of the mohicans, we should wean enough knowledge and impart this to our younger generation, we cannot let such classic cooking methods die down and get sucked up in a distant memory.     #GaithreeDeviLuckan I've been watching your videos here in NZ and been loving them. Of late I've been missing Durban style Indian food and your recipes have made me want to cook my own curries etc. Watching one of your videos I see you grew up in Sezela, I went to primary school there and grew up in Pennington. Our bus driver then (1990-1992?) was an Indian guy named Ram, what a character!

      We grew up in Sezela in the 1960s and 1970s. I got married in 1979 and moved to a small settlement near marianhill/pine town.

    Hi , I watched your video on the fish biryanis, I am so glad that I came upon this video , will definitely try it especially for my husband . I just want to know how you cook the rice with the two different colours . Thank you .

      When cooking the rice we add hurdee (tumeric) - this gives the milder yellow colour. After the rice cooked we added egg yellow food colouring that gives the brighter orange, almost red colour to some of the grains.

    Aunty you are such a talented cook.
    I wanted to ask you if you ever use butter or ghee in your breyani.
    My mum uses butter or ghee to fry her onions and too braze the curry .....with a mix of oil too.
    So with breyani.....we always do a mix of dhania mint onion and tomatoes....in food processor ....thats the base of all breyani. Maybe Tamil people have a different style of cooking. We don't use peas at all.

      We do add in butter or margarine from the top, especially for veg Biryani. That base mixture sounds interesting. When do you add? While still braising?

      @@GaithreeDeviLuckanAunty, same as when you add your tomatoes....thats when we add the "dhania mint tomatoes onion" liquidized mix....we put "chillies" too in that mix..I forgot about that.
      I will be trying your way.....looks so much quicker and less pots to wash.

      The oven is to dry out Biryani just a little bit. As long as you watch it and you keep your heat just low enough to allow the biryani to dry it should be fine 👍🏽👍🏽

      We do that on other biryanis like chicken biryani but fish biryani we like to make more sour and therefore use tomatoes

      Yes you can add them - cut them into thick round chips and fry off and add to the top of the biryani.

      Yes it was, we actually used it from frozen so it was not defrosted.

      Its easier to removed the scales and cut into pieces while it is still frozen. Otherwise it gets too soft too quickly.

    What is the red in the cooked rice please?

      It is good colouring. The colouring is called egg yellow. Where the colouring is added it is more intense so shows up as red an not yellow.

      Usually we use sour milk to help tenderise meat. Fish does not need to be tenderised.
