Something I like about Luffy's character is that he will apologize when he realizes he has done something wrong. The fact that he also corrects himself on Bonney's name and apologizes again to say it right makes it even better.

After getting destroyed by Nami countless times when she’s mad, I think Luffy’s finally start to get the idea to not make girls angry. Hence remembering her name and calling it correctly
In this case I feel it goes deeper than that though. Luffy can tell that Bonney is genuinely upset and he just made it worse with his remark about cyborgs. Luffy is really good at recognizing people's emotions and he takes responsibility here.
