Enchiladas are my favorite- and when I make them, everyone loves them! It is such a labor to prep the tortillas...and on holidays, I'll do 2 large trays, 4 dozen. It's a few hours but seeing everyone's faces makes it worth it.

That is an amazing, mouth watering recipe for Beefy cheesy enchiladas. I am definitely going to make this for my family. I might tweak it by putting hamburger Meat but keep everything the same. Also, great tip of the corn tortillas. I love how you grabbed one to catch the oil so the cooked one is drenched I'm oil and won't fall apart. I'm learning something different with your recipes and the techniques. You're awesome 👏
With good homemade Mexican food there is always a good deal of prep but so worth the work and wait! That’s why I love our local Mexican restaurants. I’m always sure to tell my waitress to give the cook my thanks and let them know that their work is so appreciated and delicious! Claudia needs to start her own restaurant! Here's a story I think you'll enjoy--I was born and raised in California and a dear friend of mine from Visalia went off to college at Princeton University in New Jersey! About a week later I got a phone call from her and she was LITERALLY crying! WHY? she went to a place in New Jersey--and this had to be the mid-1970's or so--that CLAIMED to make Mexican food. She ordered enchiladas! And what did they serve? MANICOTTI with CILANTRO on top! ROTFL! Good things times have changed, huh? Looking forward to your book, and thanks for the delicious videos!

Even though, I’m of Japanese descent, I wasn’t raised on Japanese food. I was raised making Mexican food from scratch, so I absolutely LOVE your recipes! We love enchiladas in this family. We have the og pressure cooker: the Power Pressure Cooker. I've never handled meat like that before - just ground beef patties.
@CB-km5ql chuck has more of beefy flavor and tender is more mild, tender and less fat. You don't have to use both types, you can use any other kind of meat. 😊

I want to make this for my family! In the recipe listed, there is 2 lbs chuck roast twice. Does that mean I need to buy 4 pounds of roast?
0:13 she says 2 lbs of chuck tender roast and 2 lbs of chuck roast, so yes, 4 lbs of beef in all.
