I think FC Amsterdam would be a better team for Netherlands. Even though only existed in 10 years, but they were the most potential football team at the beginning. With the merge of 2 tradition Dutch teams Blauw Wit and DWS, they made it to the UEFA cup in their second season and were a rival to AJAX Amsterdam at some point.

I would have chosen Club Français or Calais for the French one. Club Francais won the Coupe de France and played in the inaugural Ligue 1 season.
Calais was an overachieved club but Francais was technically "French Football Club" so they were obviously the better and more tradition team.
