    Any chance you might put you hands on new "custom" line from Messermeister to compare it the the Meridian? Price is so tempting, steel is the same and its even thinner (2,2mm). Wonder if its worth a buy.

      Probably won’t be getting one sorry. It’s hard to say how well they’re done. I can’t find the height and you can never tell what the behind the edge thickness is without having it in hand. Unsure about the balance and comfort of the handle to blade transition too.
      I don’t see any red flags but I can’t yay or nay it!

    I like how tall the Mercer is but the stealth is awesome. I just got the 6 inch stealth chef knife on sale and liked it so much I just bought the 8 inch on sale as well. For $119 the 8 inch chef is pretty sweet deal

      I just plain love the Stealth. I wish it had a little flatter profile towards the heel of the blade but other than that I adore it. Very sweet deal!

      @@EngineersPerspective701 I felt the same way and when I sharpen it on the stones il eventually get it flatter.

      @@ILoveTheAllCreator very different in almost every way. The meridian won’t leave you disappointed with ease of cutting

    Darn. I went for the wusthof classic. Thought that the messermeister might be a bit better as it was advertised as thinner/lighter but I guess the wusthof marketing got me!

      Wusthof Classic is a great knife too and is backed by their famous warranty!

    how is the meridian handle compared to the ikon? the one thing i didnt like about the ikon was that the handle was just a hard plastic that i could tell would get slippery easily, and it wasnt that comfortable

      They are both the same slippery plastic material but it really comes down to the handle shape and balance on these guys.
      Because the Ikon is so back heavy you almost have to use an on bolster grip. Although extremely comfortable and despite the wedge shape handle, I do slide backward on the handle and have to readjust periodically.
      On the Meridian stealth, it’s lighter and more forward balanced so a normal pinch grip on the blade works well. In that case it doesn’t matter because you won’t slip forward or back. But if you do use the on bolster grip I’d say the slipping is worse because of the neutral handle.
      Both are very comfortable but I do personally prefer the ikon handle. They’re both really great though! Hope this helps!

    What about the Oliva Elite?

      I’ve used one once in a store on some carrots so limited experience. I will say LOVELY handle, good balance like the meridian. However there isn’t a “Stealth” version so it’s thicker (3mm vs. 2.4mm) spine and heavier making it a noticeably worse cutter.
      I think you’d be 100% happy with the Olivia especially if you appreciate the looks as I do but I’d recommend the meridian stealth overall for the better performance

      @@EngineersPerspective701 On the Messermeister website it says the Oliva series has stealth blades. Maybe it's been changed since you last used it.
