Udhayam brand urud dhall soak for 2.5 hrs and grind , idly dosai very nice and soft, fluffy with out soda uppu. I too tried all brands but finally satisfied well with udhayam brand . I am using for past 15 yrs the same brand in singapore . Thoor dhall also 3-4 whistles without presoaking method also excellent soft cooked , no need to use mattu to grind it.
Yes me too using Udhayam brand but some urad dhal which we get from Arisi mandi makes more quantity than the udhayam brand..

Can u pls share ur Amma's authentic traditional recipes & how she prepared these dry powders for Arisi Upma, Ribbon murukku, mullu thenkuzhal, sundaikkai vathal powder & vatha kuzhambu which is a good combination for curd rice.
