I always wonder those all techniques are rarely seen in real combat. It looks nice in choreography and are those techniques useful against an experienced fighter, not only physically but someone who's mentally capable to fight in real life.
To comment on your question in 9:45, when your that close to your opponent you should be able to feel him and then apply Sifu Hamby's technique. Your arms should be so sensitive that they become your eyes, you should be able to see w/your hands. Excuse my 2 cents.
