Hey all! Tried to make this as beginner friendly as possible. So they were not perfect, but they were still incredible! A couple of notes from the cook: 1. I overestimated how much radiant heat the ribs get on the second rack (again lol) so I recommend you cook them at 250F on the second rack and 225F if you cook on the first rack. 2. It’s a little bit more work, but for my taste I would have taken the entire fat cap down to about halfway down, it was still really good, its just the fat was so rich. If you don’t like fat, just take it all off! But if you don’t do anything (like you saw in this video) it still turns out great with little to no trim. So no worries if you're not confident in your knife abilities. Hope you guys enjoy! And I’ll see you on the next one ✌😁
Yeah beef ribs are awesome man, have some in my freezer stocked up. Love the comedic little vids you put in. Does the mushroom soy sauce impart any flavor? I know jirby uses it. Also you should cook up a pork shoulder think that's the "easiest" one everyone can do.

A suggestion if you are trying to find plate ribs. Try Restaurant Depot. Thats where I get mine. Since the pandemic, they have been open to the public (I think they still are). Prior to the pandemic, I had joined the Kansas City BBQ Society. I don't give a crap about competition BBQ, but one of the membership perks was that you could get a day pass to shop at Restaurant Depot. It's $40/yr. So, sort of on the order of a BJ's/Costco/Sam's Club membership. I like going there since I can find stuff I just don't see anywhere else.

Only problem is, since my cook time for brisket is usually an 11-13 hour cook with a 4 to 6 hour hold/rest time in the oven, I just don't know how I would cook this thing while still going to school during the morning and early afternoon. I was thinking about smoking the brisket (3 briskets, 15 pounds each pretrim) a couple days before, vacuum sealing them, freezing them, then reheating on game day. Thoughts? Should I stick with just reheating them? The only other idea I had was holding the briskets in the oven for a prolonged period of time (instead of 4-6 hours, it would be close to a 10 hour hold), but I'm not sure what will happen to the briskets if I hold them for that long. Thanks!
Hey bud! Awesome to hear i have a high-school pitmaster watching, you are the future man! Either of those will work! I've never vacuum sealed a brisket before but I hear it's the best way to reheat. You can def hold a brisket for like 12 hours in an oven just make sure you recalibrate the oven so it cooks at 145-150F (make sure to check the temp with a probe after you recalibrate) and make sure you're using prime brisket or choice with really good marbling so it doesn't dry out during the long rest. Yeah porter road dino ribs sell out really quick (I think because of the quality/comparative price to other places) I def would go on the wait list if you're interested. But there are other places you can go too. I've heard mixed things about wild fork for example, but mostly positive. However, i haven't tried them myself

I'm good! Thanks for asking. I had a pimple and I kept messing with it and it just left a huge mark. Thought the bandaid was a good idea to cover it up but realized after I filmed it probably brought more attention than just having the mark 😂
UGGHH!!... I liked everything you were doing until you said you were using a pellet grill and not an offset smoker...🙄🙄🙄😵😵😵 I have found they just burn to clean and you don't get good smoke flavor. You might as well be using a propane grill, really.. 😝😝😝😝 I guess I'm just gonna have to make a video myself and show how it's done.. Pellet grill.... Give me a break... That's not BBQ my friend!
