Veg Kolhapuri (Jain Recipe) | No Onion No Garlic | Vegetable Curry

Ingredients and MethodCauliflower- 1 cupCarrot- 1/4 cupFrench beans- 1/4 cup*Steam veggies for 10-12 mins on low- medium flame until soft. *In a Kadhai addOil- 2 tbspCinnamon stick- 1/2 Star anise- 1Black cardamom- 1Black peppercorn- 8 to 10Cloves- 6 to 7Coriander seeds- 1 tbspCumin seeds- 1/2 tbspDry red chili- 2Dessicated coconut- 3 tbsp*Roast on low flame. Allow it to cool completely and then grind with some water into a thick paste. *In an another kadhai addOil- 3 tbspBay leaf- 1Cumin seeds- 1 tspAsafoetida- 1/4 tspTomato puree- 4 medium tomatoesGinger paste- 1 tsp*Cook until oil seperates and then add the spicesTurmeric- 1/4 tspRed chili powder- 1 tsp*Cook for 1-2 minutes. Meanwhile boil the fresh red chilles until soft then grind into paste. Also, grind some soaked cashew with some milk into a smooth thick paste. Add both the paste to the curry and cook 2-3 minutes. Add water if required. Fresh Red chili paste- 2 tbspCashew paste- 4 tbspWater- as requiredSalt- as per taste*Add salt and all the veggies and cook for another 2-3mins, add water as required.Corn & bell peppers- 1/4 cup (each) Water- to adjust the consistency.*Finish it with some garam masala, kasuri methi and fresh coriander. I have seen videos where people just show food with no onion no garlic but then add they potato and ginger and describe it as jain food 😂 but its not completely correct 😅
