hearty soup (rough) recipe:
- 1 brown onion & 3 cloves of garlic (sauté)
dice:
- 1 carrot
- 1 stalk of celery
- 1 zucchini
- 4 large mushrooms
- 3 potatoes
add:
- 1.5L veg stock (extra cup water if you think it needs it)
- 3/4 cup of red lentils
- a few chunks of fresh ginger
- handful of chopped kale
- salt & pep to taste
cook for 2ish hours & enjoy with crusty bread. enjoy !
