    just a tip a full freezer takes less electric to cool.. in my large freezer I keep milk jugs of water for 3 reasons 1 to save a little electric 2 to make my meat higher up in the freezer for reaching and 3 emergency water/ice if electric goes out.. also helps keep meat frozen longer if electric goes out.. I always fill my empty spots with various water jugs bottles ect also nice to grab a frozen water bottle if I plan to work outside for a extended time

      I fill up plastic milk bottles and freeze them then take one shopping in my cool bag they last for ages before thawing

    When you said "We don't eat much pork." I remembered the first time I heard Justin Rhodes say "'cause I like pork better than chicken" when he was explaining why a culled bird went to the pigs instead of the kitchen. Your pallet will probably change as you produce new things on the homestead. Keeping one and selling one is a win, win. Good food for you and another family, no financial hit for you and the pigs were raised with companions to keep them company.

    Make the Lard. I did for the first time this year. I had a whole pig processed and requested all the lard, I ran the fat through my Kitchen Aid meat grinder. I used a crock pot that did not work well. I switched over to a 5 quart cast iron pot. Render on low heat. Low and slow. The cracklings will form, crispy and brown. Filter through cheese cloth. Pour into jars while the liquid is hot. Use dry lids. No Water. Put a ring on it. It will seal on its own. It is easy and rewarding.

      The crackling is good, it was a great treat for us kids. We used to butcher a whole pig and whole beef once a year.

      We also add the cracklings to cornbread. It is a yummy treat!

      Those cracklings that float to the top are so good! Yes a cast iron pot. But make sure you are there to watch it, as it can go too far and not stay white like you like it to look, but sill still be useable. Check Mr. Google Pants to show you how to do it! You will be happy you made it!

    The leaf lard is usually rendered down and the bits left over are called cracklings which can be added to soups, stews, cornbread, or eaten as snacks and the rendered lard can be used as cooking oil or to make pie crust, bread biscuits etc. Congratulations on your harvest!!

    True pure leaf lard is so hard to come by. I am so jealous. Lorraine will know what to do. It makes AMAZING biscuits and pie crusts!!! It's the fat around the kidneys of the pigs I think. Thank you for this great video. Edit: Just in case, Deep South Homestead is one of the many homesteading channels out there that show you how to render leaf lard. It's the most prized lard. I'm excited for you guys. And jealous!!!!! Great job!!!

    Your lady mentioned the key point when looking for a processor. Make sure you will get back YOUR meat and all of it. So many processors also sell over the counter and will sell good meat to the public. You as a grower will be told you will get your equal weight, but not necessarily your actually meat. It is becoming hard to find honest processors. Great job and glad to hear this company is a good one.

      The main reason we set up to do our own on the farm. Building a walk-in cooler isn't all that hard, and you can power it with a window AC unit.

    You guys did great. Love pork . The best part , you bought the right freezers. Remember when you open the door on your refrigerator or upright freezer picture it full of cold water and all that cold water falls out and has to refill it’s self. With a chest freezer all that cold stays in.

    Rendering lard is so easy with a slow cooker or Instapot. I freeze mine in mason jars until I need it & then keep the jar in the fridge. Love to fry greens in lard. Yum! Yum!

    So glad you found an honest facility for processing!!! A lot of butchers will sell your pork for high prices, give you lower quality meat than you raised, & not give you all of the product.
    Once the lard is processed you use it in place of bacon grease, etc for frying. Excellent tasting! I think there is a cookbook called "Grandma's secret ingredient " or something similar. The pork shoulder makes great carnitas.

    So happy for you, what a blessing! You will love pork butt (shoulder roast) Best pork roast you will ever eat, makes awesome stock, you cook it low and slow. Great for tacos (or taco bowls) and so many other things. You can re-freeze the leftovers, or you can pressure can it for long term storage in family sized portions. And even though what you sold the other pig for may have basically paid for your expense on the other, you still provided another family with quality meat at a price they most likely could not have gotten elsewhere! Looks like you found a great and honest processor also. As always, thanks for sharing your journey! 💕

    At nearly 100 degrees, the only place you're gonna find pigs is hidden or in a wallow. I appreciate that about them because I feel EXACTLY the same way.

    What I did when I did my big garden and froze stuff, I put things in a clear storage totes that fit in my freezer and that way I didn't have boxes in there. Loves and hugs from the 61 little old lady in New Mexico USA, May God bless you and your family.

    We bought a bunch of square and rectangle baskets from Dollar Tree. We organize our deep freeze using the baskets to separate out the different cuts. It really helps make it ready to find things. Good job. We butchered 9 potbelly pigs 2 year ago and just finished all the meat from them last fall.

    A good smoker will become your best friend. Slow cook all day and great fall apart meat with very little work. Grats on the haul. A little smokehouse the size of an old outhouse will be a great venture for curing and other types of smoking. Glad to see you all getting the rewards of your work.

    Next time you buy a freezer, consider getting an upright. You can stack your meat by cut on the shelves and keep it very organized.. You also don't lose anything in the bottom of the freezer. Added bonus, it takes less floor space.

    the lard. Please, do as Zola is suggesting. Use the lard as you would any shortening. Excellent for pie crust, biscuits and such. When rendered slowly, the cracklings are the brown bits on the bottom, and are excellent in salads, as snacks and such. You will LOVE having your own pork in the freezer, and certainly, you'll have cuts you will love but would never have paid such high prices to get. Well done, all of you!

    Sooo worth it. We've been raising our own for 4 yrs. Have 6 of them right now 1 for us 1 for daughters fam and selling the rest to family and friends.     Bacon curing is easy, leaf lard makes the best pie crust you've ever tasted, and both Boston butts and pork shoulders make awesome pulled pork BBQ! Lorraine just needs to take advantage of all of the excellent recipes from fellow TH-camrs! I'm so happy that you guys can enjoy such great quality meats.

    When it comes to space saving i would suggest getting the tall freezers in the future because they take up a lot of space in the long term.
    You could actually build a walk in freezer or a shed for fridges and freezers

    Milk creates work really well in a deep chest freezer for organization by cuts. You can roast the pork tenderloin in the oven or in a crockpot like you would a roast. Rips, Boston butt are great on a smoker.

    My wife takes the picnic cut to make pulled pork. She slow cooks it in a crock pot. We love it. Hey just put some cushions on those freezers and you got yourself a couch! Liked the tour of the processing facility, small scale gives you a good feeling. Lard for the pie crusts just like grandma used to make! Thanks I enjoyed the video.

    That leaf lard is priceless! Get it chopped and into slow cooker quick. You will never regret the time. Then into cans for storing so easy. Healthy leaf lard - YUM and so practical.

    Freezer suggestion: Once you start getting multiple freezers (we have 6), get freezer alarms on all of them. And going with smaller, multiple freezers is what we do as well. Spreads your food out so IF one goes down, it doesn't hurt you as bad. As we eat them out, we cut one off and condense the food down.

    Pork meat is very flavourful. You will find that many cut are low fat. I keep a list of what's in my freezer and the date of purchase. Take something out check it off the list. Anything new put it in the bottom rotating older to the top. Congratulations on your first pork order.

    We have a similar freezer...if yours is the same size, the 24 quart milk crates fit almost perfectly. We can fit 6 in our freezer since they stack nicely.

    Jason and Lorain, I think that you'll enjoy the pork loin. The way that I prepare pork loin is marinate in fridge over night in an air tight or covered container or bag. Cook slowly covered for two hours or cook instapot or pressure cooker. Side dish with favorite veggies. I eat fresh tomatoes or stirfry, sometimes cabbage or brussel sprouts.
