Because it is unexpected and surprising and Haydn is all about surprises. It makes the music more interesting. It is also a common practice of the time. Bavouzet is a master of this when it comes to Haydn.
@@pablobear4241 Adding extra ornamentation is standard of galant music. It adds a lot of charm to the piece, which is certainly one of the defining features of Haydn's music! Mozart was known to have done this as well, adding occasional trills and appoggiaturas. This performance is excellent! I agree with Zhannagumenyuk and Bavouzet's excellent interpretation of Haydn in this piece. Each performer has their unique benefit, and I think Bavouzet does do a wonderful job.
