Persian Love Cake/Perzische liefde taart

  • Let us be enchanted with this beautiful and delicious Persian love cake.
    Ingredients:
    for the infused saffron milk
    1/4 tsp saffron
    6 tbsps hot milk
    pinch of salt
    for the batter:
    150 g softened unsalted butter
    112 g granulated sugar
    3 room temperature eggs
    infused saffron milk
    2 tbsps Greek yogurt
    zest of 1 lemon
    1/2 tsp cardamom powder
    1 tsp rose water
    1/8 tsp salt
    75 g cake flour
    1 tsp baking powder
    200 g finely ground almonds/almond flour
    for the Icing:
    150 g powdered sugar
    5 tbsps milk
    for the syrup:
    100 g granulated sugar
    3 tbsps lemon juice
    1/2 tsp rose water
    for garnishing:
    dried edible rose petals
    slivered pistachios
    almonds
    melted butter to grease the spring pan
    19 cm pan
    150 C for 45-55 minutes
    Note:
    Make sure that the infused saffron milk has totally cooled its temperature before adding into the batter
