As for techniques, I’d love more techniques to prepare seafood. Boning fish, preparing clams, oysters, etc. I grew up in a family that fished, went clamming almost every day, but my father was lord of the kitchen and he never taught me how to do anything preparing them too cook. He wanted to shield his daughters from anything he deemed unpleasant. I have learned so much from your knife skills, I’d love to learn anything and everything about preparing seafood. Thank you.
I haven’t watched all of the episodes in your channel however I love the most recent ones. I have always thought Food Network should do more cooking tutorials with knife skills ,education on the types of cuts, and step by step guide on how to make the meal. It is great to see that you’re finally doing that style of video. Your energy and pace for these videos is perfect. You make cooking approachable and not so intimidating with these videos. Also, can you do a General Tsao’s chicken.

.....heres a long shot. Years ago. Peking gourmet, derby, connecticut, long since closed; they used to make a duck dish i cannot find in any restaurant or replicate. The duck was fried, divided up into squares, and it had a strange and addicting type of "streusel" on the top of it. Served with hoisin but it wasnt called peking duck. Very dark and flavored heavily with star anise. Sorry i cant describe it better. Might you be familiar with it?

If a suggestion, an original dish from Asia, Thailand especially. Something you'd see in Bangkok, but wouldn't see here. Or any other authentic dishes. I love learning legitimate foreign cuisine.
