Hi CPJ! the blue shell depends on the breed of chicken, only a few breeds have a genuinely blue shell, the Aruacana, from South America and the American breed the Americuana, which descends from the Araucana, and Cream Legbars (which were developed from Leghorns) The inner shell is *blue, and right before laying and blue pigment is deposited to the egg. interestingly, for brown eggs, a brown pigment is deposited over the base white shell. The white shelled eggs you are probably accustomed to dont' have any external pigment. It just depends on the chicken breed. To get olive colored eggs, you cross a blue egger with a brown egger, the brown pigment is deposited over the blue inner shell. fascinating!
you could also do an easy mayo with and immersion blender, egg, salt, vinegar in small amounts and about a 1/2 to 3/4 cups of oil ( I find walnut oil to work well, and have neutral flavor) then blend. I have heard of people using duck fat for animal based mayo.
