u can't see the infamy progression because you didn't get any challenges completed, which is the way to raise your level. as for leveling up your abilities and weapons, 99 Boxes glitch is far more superior.
My best is 2 mins 3 secs trying get under 2 mins it is possible your bouncer part is to slow and running all way through you can do easily which is why your run is slow, I'll upload my 2 min run tomorrow so you can see how easily it can be done you are crouching and slow walking to much running is fine all the guards do is walk to where the footsteps were pretty easy to avoid, I'm level 89 over 500 challenges completed so far I'm at 140 stealth complete on rock the cradle complete all achievements was easy kinda sucks why there ain't the payday 2 achivment in payday 3

my best is 1:58, i think anything lower than 1:50 is impossible unless you get lucky with guards and cameras
