My piano teacher taught me that they play music not notes on a sheet 😭 when you’re this good you know how it’s suppose to sound and can make the sound come out of the piano
Depending on the type of piece after a few years, months or days ( depending on how hard you practice) it eventually all becomes muscle memory so it flows it naturally
It's mostly muscle memory and in case you especially like the piece you've likely heard it so many times you remember everything about it.
muscle memory and visual memory is not the same thing. The brain is really something very complex

I started playing piano, and i started playing at a piano in a station. Went pretty badly, the piano missed 5 keys which were quite important to the only few songs i know on piano...
Then a hobo came and he was like: you can do this to make it work without the keys and jsut went ham. Ive never felt so bad at something before haha.
