    We always packed the cabbage in quart jars and sprinkled a tsp of salt over the top and packed it more by the end there was plenty of juice in each jar. I never knew about any other way than this until I saw your first one and squeezed the cabbage in a bowl.

      That's how my mama made kraut. Hers always turned out so pretty and white, and so crunchy.

    I learned a cool tip last week. I was told a family made a ton of sauerkraut in big crocks/buckets and they would submerge whole cabbage heads in the middle and as long as it was fully surrounded by the shredded cabbage it would ferment. Then they would use the whole leafs to make cabbage rolls/stuffed cabbage with it.

    I remember making sauerkraut as a kid. Mom would use the grater to shred up hers. I don’t remember the “mixing” process, but maybe we did that! She packed it in the milk curn, which was a masonry crock and weighted it down with a saucer and half a brick, then covered it with flour sack dish towel. I never was a big fan of kraut....but the family loved it!

    My mom was German but we never stomped on the cabbage but I do remember slicing a ton of it on this old wooden cabbage slicer. She made it in a big earthen butter churn. We ate a lot of saurkraut growing up...I still love it!

    My Mom gave me an old crock from my grandmother (whom I never knew). It was pretty special to make my first batch of sauerkraut in it. Your jar looks beautiful with all that cabbage in it.

    You DO have a cabbage patch baby! He is SO cute there trying to help! LOL! Great job with the making of the sauerkraut! I usually just ferment the cabbage in a quart jar because the family doesn't really like it as much as I do. So I make a quart, eat it half way and start another one! YUM! Again, great job!     Love the way the kids jumped in to help! That jar is just right for large batches! We've got a 3 gallon crock (which I need to put to work!) and kind of miss seeing the cabbage working. Maybe you've inspired me to get mine going again!

    i love making sauerkraut. I prefer a jar with a large mouth tho. you might try saving a few large clean outer leaves from your cabbage to place as a seal on top and then a zip lock baggy filled with saline solution to use as weight. I finally invested in a vent that fits onto the lid to my jar. I feel more comfortable in using it as it lets the gasses out but nothing in. ENJOY that wonderfully healthy kraut! ps glad it wasn't me up under the house crawling around in that mud. ugh. youre a good man.

    That's awesome, I've made two cabbages into fermented kraut. Always add salt and garlic, have added cranberries and Caraway to some. It's ALL excellent. Yum

    I LOVE this! Your kiddos know at their core about their food. By exposing them to fermented foods early they not only are learning about food preservation but they are also building a great gut colony for health. Your 'cabbage patch baby' and your cabbages look amazing!

    you could fill a clean plastic bag with water to weight the sauerkraut down.

    We used a 15 gallon crock when my parent's made kraut he "massaged" it with a bat. The core was a treat the kids got after clean up.

    I've made sauerkraut for years and the ones that tasted the best were those that had been fermenting for 3 months. Red cabbage is my favourite.

    My grams always used marble or river rocks in pantyhose or a bag (for the river rocks) as weights when she made sauerkraut. This was awesome and you made it look so easy. God bless 💕

    We make our own sauerkraut one a year. We have an old cabbage cutter to cut the cabbage. It’s essentially is a really big mandolin it works great just don’t want to slice your fingers or hands with it. Then we put the cut cabbage in an old crock. We just toss the cabbage in a layer at a time salt it then pound it with a French rolling pen that I have. Usually by the time we are done there is plenty of brine so the cabbage is completely covered. Usually just cover it with at towel and check on it every so often. We let ours ferment for a few weeks. It sure is yummy.

    I make my sourkraut the same way you do, but I put it in a big plastic tub, and after salting and massaging each layer I cover it and let it sit for a few hours and massage it when I checked to see how much liquid. This really saves a lot of time and work. Love your family. Blessings to you all.😊

    I think many of your viewers were just as taken by that huge beautiful pickle jar as I was! I assume they are rather valuable today! Do you know how many gallons it holds?
    It was nice seeing the children gathered around the table all helping make the sauerkraut. Is sauerkraut something all the children like to eat? Pork and sauerkraut is one of my favorite meals especially when served with corn bread.

    You can add shredded carrots (i mixed them all together with cabbage) as well, they will add another crunch and color...I usually add fresh (or frozen) cranberries and caraway seeds, this brings the flavor to another dimension...cheers from Toronto/Canada

    Thanks for the video. I love fermented sauerkraut. I make mine with beets, carrots, ginger and of course cabbage. You might just try a qt. And I think you will love it.     Love your videos. I am a homesteader as well and enjoy making fermented vegetables. Can identify with many of your lovely problems, isn't it fun figuring out how to solve them? I am wondering how you are going to skim the top. It seems to me it makes it easier if you use a crock with straight sides so it is easier to weigh down the cabbage and skim the skumm.     Ok so my 68 year old mom and I made 16 gallons of a very nice crop of cabbage. It was exhausting but in a few weeks we’ll have a delicious sauerkraut. Mmmm 😋

    My mother had a huge barrel in which she cured her sauerkraut. On top of the kraut she placed a thick glass disc with a heavy, white limestone rock to weigh it down. That was the best sauerkraut I have ever eaten. This was in Lancaster County, Pennsylvania. So, may your kraut be as delicious as that.

    Couple tips from our pickling endeavors. The European rolling pins the kind without handles are great kraut crushers. Also for soft pickled vegetables like cucumbers adding a little unflavored kombucha keeps them crunchy from the tannic acid and will boost fermentation times from thenprobiotic content

    Yum! I might have to arrange to wander by in 3 weeks. I've seen one source that says just pack the cut cabbage in the jar with salt and mash it down. I've always kneaded it until the juice came out like you did and I've never heard an old-timer say otherwise. I need to make another batch in my puny 1 gal jar.

      Wonder if you could grow in the winter months. I live in Texas. I put my cabbage in the ground in late August and harvest throughout Jan-Feb.

      K Flan it’s mostly the humidity that kills us here. The only time I can have a vegetable garden is in the winter, is he sun is so intense in the summer - it’s not even the heat it’s just the intensity of the sun.
      Not to mention the bugs are crazy!! I have tried for over 10 years not harvested one cabbage. Lol. 😜

    I love the purple layer. That project was labor intensive. Which seems to be the case with most greens. With lettuce and those leafy greens its the washing, over and over. Beautiful jar. Thats a lot of saurkraut. Does everyone in your family eat it?

    That's interesting info about salting. I recently purchased fermented kraut that was perfect in it's flavor. Too often brands I've bought at the market are so salty I've needed to rinse it before we could eat it and it caused me to put off making kraut because of it. So I've been wondering if the ratios could be lowered safely.
    The mom in me was saying "Be careful lifting that jar off the fridge!". Beautiful jar, but holy smokes that's a lot of weight, and in glass!
    Another thought, I wronder if Wilder will grow up loving cabbage more than other veggies. I really enjoyed how the kids all got involved. Being in the kitchen helping preserve the harvest makes for some of the best memories. I used to help my dad with kraut cutting and eating. Homemade sauerkraut is the best, but better are the memories.
    Totally enjoyed the video this morning, a happy distraction that I am glad I followed.

    Making kraut is FUN!! The next time i do it, i may store it in a big crock in a rootcellar that i will ( hopefully) have. Mine was much better before i jarred it and processed it.. Processing "kills" it..
