"ğ" is pronounced.
there is a clear difference between
yourt and yoğurt.
istanbul turkish is distorted in this context. however, you can hear "ğ" clearly in all over turkey.
for example take a look at those words.
eğer (it's not eeer )
ağda ( its not aaada )

Why don't we add s in onrarın şeyi to be onların şeysı?

you only need the s when the noun ends in a vowel. şey does not end in a vowel so you don't need the s.
