RECIPE: Ingredients: 1 tbsp garlic infused oil 500g chicken breast, in chunks 100g leek, chopped (or onion) 2 tsp oregano 1 large lemon, zest and juice 250g gluten free orzo 600ml stock, ensure gluten free 2-3 tbsp cream cheese Big handful spinach, chopped 2 tbsp parmesan cheese (and more to finish) Salt and pepper to taste Method: Heat the oil on a medium heat in a pan with a lid. Add the chicken, cook until nearly sealed then add the leek and cook until softened. Add the oregano, lemon zest, gluten free orzo and stock. Bring to boil then reduce the heat to simmer for around 15 minutes with the lid on - stir a couple of times to ensure its not sticking to the bottom. It might take a couple of minutes longer, so check a couple of pieces of the orzo. If there is too much liquid, leave the lid off briefly to reduce. Stir in the cream cheese, lemon juice and spinach so the spinach wilts, then stir through the parmesan. Season to taste with salt and pepper and serve straight away with extra parmesan if you desire.
