This video is not about hygiene it's about the speed and art the lady has mastered definitely after years of selling experience. These people are selling snacks at a stall trying to make a living . If you don't want to eat don't no one is forcing you but don't lecture about hygiene , toxicity of the newspaper used for packing . We all can see what they are doing .

She's fast, hard working, and she's also beautiful. Simple, modest, and gorgeous with no makeup. I don't know what this food is, but it looks hot and delicious, and probably healthy vegetarian. I have seen street food in Mumbai is better than any other city in the world, in my opinion. I think it would be great, if they establish a hygiene code that all vendors must conform to, so everyone uses clean serving plates, utensils, and clean water.
It is easy to establish a code but very difficult one to follow since they have to maintain a cost to provide cheap food to customers who cannot afford the costly food. Establish the code and force to implement it and these vendors may lose potential customers. Hygiene is certainly an important aspect but I guess for customers of vendors like this ,cost is bit more important aspect.
