Miss Sophie, If this cottage is to be only for hosting guests or an Air BnB you should keep that as your goal. From a man's perspective, the bathroom is not scary! Yes, the color is repulsive but that can be fixed! How about removing the tub and making a walk-in shower as the space is a bit crowded ( the plumbing and electricity are already installed ) The future bathroom as you described sounds like a very good plan as well, (but will be a bit costly) or add a wall and make a tiny bedroom or add a day bed? Too bad there is not a bathroom upstairs as well! I like the kitchen and would not get too radical with remodeling IF it is for short-term guests only. - You are creative and have great ideas! How wonderful that you have acquired 2 working spinning wheels! I have just finished spinning a lovely red brown alpaca yarn and started another in white. It looks like the fiber left on the first one is flax used to make a linen yarn. If you don't already, maybe you could take up knitting. It's a very satisfying and productive thing to do, spinning yarn and knitting through the long winters and lovely summers (perhaps outdoors). There are many videos on youtube teaching you every step of the way!

Another alternative to the middle room where you said you may put a bathroom would be a dining room, maybe a banquet and window which would free up more room in either the living room or kitchen if you wanted more space there. Upstairs you may be able to vault the ceiling for a bit bigger feel and more headspace. Cant wait to see what you do! PS you have me fantasizing about buying a place there, Canada is so much farther away for me family... hmmm.
I have a lot of ideas, not sure of costs. But i agree to leave the kitchen sink oven etc for the aesthetics. That wall between the kitchen and middle room could come down and you could create an island with seating, and create a bench seat under the window in the middke room. Or yes use it as a dining room. You xan easily revamp the bathroom, on the wall where the sink is you put a shower, moving the toilet and sink to the other walls. I would not create a new bathroom, way too much cost. Sure raise the roof upstairs. And combine the two closets into one . Sell the spinning wheels, i used to spin. Great hobby. Decide on a theme and colors before you start. You could use much of the furniture, some to be recovered. Ive not been to Sweeden, from California USA so my opinion s may not work over there. But something to consider. Is that a toilet when you walk in ? If you want to keep it, just put up a wall there, so you have a downstairs toliet. Maybe add that tiny upstairs sink to that room as well. It will be tight but it should work. Just my thoughts. Good luck !!
