Because of the high sugar content, like many jams, unopened it will keep for a long time. Easily until the next pomegranate season.Just make sure your jars are well sterilised and the lids are well sealed. They should "pop" as they cool down, this indicates a good seal. Once opened it's a good idea to keep in a fridge and consume within 6-8weeks.
I use it for baking a lot. In summer where we live in Portugal it gets stinking hot, over 40C so we do most of our cooking outside. I use it for Bbq marinates or it is really nice drizzled over grilled cheese.
Mom always went by Bells chart. (Frozen food up to 2 years) (Canned foods up to 3 years) (Dehydrated foods up to 4 years) and Freeze dried food up to 25 years. I my self keep all my canned stuff in a cool area that the temp does not change much. and its dark. So i have had things canned for 4 years no prob. In fact my rhubarb jam I made that in 2004 and its still good. But if you are new to it i would use Bells chart since Bells has the book that has all the safe things in it.
You could use a good blender (Vitamix) instead of the handheld. Also, maybe try the wooden spoon method for releasing the seeds?

This looks amazing, how you usually enjoy this pomegranate molasses? For drinking? Or baking?
