I feel you bro, also currently recovering from a ruptured achilles tendon, found his channel a few days ago and i just love his calm way of playing and how he throughougly explains everything.
Play super passive under tower until level 6. Then you can start playing aggro after level 6 with at least 100-150 stacks. Ask for jungle help when you see they are topside and they are pushed out to your tower. Of course stack every minion you can safely and especially the cannons, they give 4x the stacks of a regular minion.
