Re: Costco meat. I just started buying the whole muscle and breaking down the steaks myself. Doesn’t take a whole lot of work, they don’t blade tenderize those, and you can save some cash if you happen to have some space in your freezer. I just break them down and vacuum seal for freezer storage for what I’m not going to use immediately.
I’m surprised you didn’t discuss incorporating spices (herbs, you mentioned) to enhance your dishes. Change the taste profile from Italian to French to Indian, etc. So many possibilities with the same basic ingredients, whether they be grains, veggies, etc.
I find your topics on these podcasts very engaging. One more thing, and this is more from other podcasts you have done, never apologize for your accent or for NY/ Long Island. The minute I open my mouth, people here ( LA area), right away remark, and I can feel the wall go up. The older I get, the more dear my heritage is to me. Be proud of who you are and congratulate yourselves that you share your talents, your knowledge and your opinions.
Love this as a topic. When we want to stretch dollars we just make a big pot of something...soup, stew or goulash. The only problem is growing tired of eating the same thing for 3+ days.

We eat amazing meals at home on a budget every week. We only eat out once a week (normally burgers). And I feel that many sip and feast recipes fit into our budget friendly cooking!
Your videos are great! I love how you lay out snd go over all the ingredients right st the beginning, as well as telling us about any appropriate replacements! I find both of these approaches very helpful. And, yes please, to more taste tests in the future!!

We buy our meat from Costco but sadly, we won’t be buying any blade tenderized meat. I’m surprised they would do this, knowing most people don’t want a steak cooked that much. This hour seemed to fly by, I really enjoyed it. Taste testing would be interesting, go for it! 🇨🇦
Cannolis! I wish I was back in Long Island, just so I could get a Fresh cannoli! Every cannoli I have ever gotten in Sacramento or even San Francisco, has had a soft/ mushy shell. I so dislike that. Sitting around to long or put back in the fridge too many days. I did actually get to have a fresh one when I was in the North End of Boston last May, and that was a thrill! What are your comments on that pastry?

We always made a pattie, and as kids we all fought over it. My own kids used to fight their father for ‘the bread’ because they all love it….his family threw it all out 😳😱
Irish bacon is different from American bacon, though. It's more like a very thinly sliced boneless pork chop that has been lightly cured like bacon. Very tasty!
I loved this video as always and I love when you have taste test comparisons. I will think on some suggestions and get back to you on that. I have a rare problem, well maybe not so rare. I have a tendency to get wordy so hang on...lol. My problem is I'm Irish.....well not a problem in itself, but my husband is Italian and the major cook. We are in our late 70's, empty nester's of course. He has been experiencing some health issues, nothing life threatening thank God which has caused him to cook different kinds of meals that he can tolerate. I have to fend for myself now and I'm not complaining, I have been a princess far too long. The problem is I've gotten lazy and have no desire to cook and have been ordering from Grubhub. Not good......for obvious reasons. I know you guys are not therapists but is there any way you can encourage me to get cooking for myself. I love Italian food, oh heck I love all food, negative on that, I do not like Indian food. Can you come to my rescue? I am in dire help here. The dish suggestions were good, I grew up with a good many of them in my friends homes for years. As for restaurants, those prices seemed to me outrageous (although Carol says they're reasonable today). Let it be said that coming up, I don't recall ever being in a restaurant of any sort (unless perhaps at a relative's wedding) until I was at least in my mid-teens, so anything way beyond what we spend for food for home cooking makes me shiver. As for the taste test, those whatever they were, had no resemblance to a croissant, and looked like a lot of dough and not much else. Those are something you need to get from a baker, period. I'd take the San Giuseppi pastry, but I would have kept the thick cream, I'm what we used to call a gavone.

He calmed my mother down & said that since I was so sick (104F temperature) she could serve me that soup. He said “God would understand” Lol A very dear friend of mine is highly allergic to eggs, is dairy & gluten intolerant. How can I make some of these delicious dishes for her?
Beans and greens (cannellini beans with broccoli rabe, or escarole, or chard) tossed with gluten free pasta is an option. Many of these do rely heavily on bread and pasta so it may be challenging. Riso al forno is a good option since there's no gluten, but you'd need to omit the cheese.
Love the podcast and the recipes. Slight correction on inflation. Inflation is the rate of change in prices. So inflation going down means prices rise slower than before. Deflation is when the average prices go down. It's generally very bad and the Fed tries to avoid it. So right conclusion (prices won't go down) but slightly wrong reason

Sadly husb doesn't like lentils. Things like legumes, bread, potatoes, rice, really bulk up a meal. I love offal, tongue etc. tripe, I eat it, but it's not a fave. Husb likes horsemeat (it's very common here) but I don't eat that. or polpo. they're way to intelligent. getting hungry now. your cornetto looks more like pan alla ciocolata? you know what you could make, which I love, is pan uvetta, bread with raisins or sultanines. yuuuum I have a questions, I know you are very influenced bu S Italian cuisine, but could you do some N Italian things? Like canederli, bagna cauda, pizzocheri della valtellina., lesso con la pearà.....
Would love to see a "healthy snacks" taste test. The mental image of Jim tasting a kale chip makes me laugh 😂 then he'll say some Curmudgeon statement about how awful or terrible it is.

People over 65 or with health issues do not have to do this. St Patrick’s Day, if on a Friday, Catholics may be granted the ability to meat if the local bishop allows it. He is in charge of this decision, not the Pope. St Joseph’s Day by tradition is meatless whether on a Friday or not.
I also think there is an element of the retailers/sellers finding out what the market will bear - if ppl say, I'm NOT paying $4/12 eggs, they try $3.89, then $3.80, etc., to see that sweet spot. It's not, I don't think, like the farmer is getting all of the increase in his pocket! The retailer/seller is upping his percentage. If more ppl would say, even though I CAN afford to eat out or to buy $4 eggs, but I won't because this is effectively price gouging - I think the retailers/sellers would slow it down. Using your dollars to vote is effective if enough ppl will have the courage of their convictions. But, mostly ppl just think about what they want right now and not long term effects. BTW, I still will not pay $4 for eggs ...
Food prices are outrageous these days and they just keep going up! Even at Costco, a large jar of mayo is over $7! Our politicians have done Nothing to stem this rise. I don't know how families can survive this. I am just me, my myself, and I hate seeing the prices keep going up almost every time I go shopping!
I mean you can see the needle marks in the steaks. It's not that hard to use your eyeballs. I'm not trying to brag but I'm a Costco Executive member. I bet the benefits are amazing but not sure what I get for that. But don't get me wrong I flash it like a police badge. Also pro tip for the listeners, if you think that's real Parmigiano-Reggiano for that amount at THAT price? Sorry kids, that's Grana Padano. The real deal is even expensive IN Italy. Nothing wrong with it... it's literally the same thing....but the fraud labeling is real at Costco. Turns out I wasn't just struck down by lightning. Things are looking up. Add an E to the end of D.O.P and that's what people are buying.

When I make chicken cutlets I freeze my leftover breadcrumbs. Leftover cutlets get cut up and added to my baked ziti.
