    I thought that it was sweet that you didn’t just make this video about food but incorporated how food can bring people together. I don’t want to get too cheesy here but as someone that went though a very difficult patch of their life though the holiday season I can definitely appreciate it that much more now that things are better. I use to take having people around for the holiday for granted and the one year that I was alone I realized how important real friends and family are to these holidays. ❤️🍁

    I just saw this recipe today, I got the ingredients and baked it and OMGGGGG this is delicious!!! Thanks so much for this gem of a recipe. Now I’m gonna have to make more to give away. My husband is a plant based chef in Fort Lauderdale and was super impressed by it! 😁😁😁

    Hey Nikki!! Thanks for the intro that you stated at the beginning. This holiday is very difficult and sad for me because my grandmother passed during this time. I know it was quite some time that she passed, but it is hard for me to feel joyous and celebrate since I always refer to her as "the glue that held our family together".     Looks delicious! I will definitely try it. Thank you for talking about the holidays being lonely sometimes for people. I agree that the best way to feel better is to invite other people over or do something to connect with other people.
    My mother is from the Netherlands and I find in Europe people weigh their ingredients. Some years back I invested in a scale. It was expensive at the time, about $100, but it was a really worthy investment. So helpful in making sure that all of your baking ingredients are accurately measured.

    I was debating what to make for dessert and was getting stressed out but this looks so good and is something to enjoy other than the traditional pie although I love pie. Making this as something to enjoy after the craziness of the day with some coffee. LOVE the fresh ginger idea, never thought of that! Thank you so much Nikki, keep them coming but no pressure!     I just made this tonight. Took me a while because I had to made the puree from scratch but so worth it. This is literally the BEST PUMPKIN BREAD that I have ever eaten. I followed the directions exactly and it come out so delicious. Thank you so much for sharing. Loving your videos!!!

    Not sure if you’ll read this. Just made this. Hands down best pumpkin loaf I’ve ever made!! I want to make muffins with this etc. Adding ginger in there Wow was genius! Great recipe thx ;)

    I didn’t have cake sugar so I swapped it out for 3/4 cup brown sugar and halved the oil and it was really delicious. My family enjoyed it. Thanks for the recipe ♥️

      Yum that sounds great! And SO smart that you reduced the oil when you added the brown sugar because brown sugar holds more moisture than cane sugar so if you had kept the oil the same, it would have been too oily and wet.     Can you use the pumpkin you grow to make it?

      A sugar pumpkin, yes. You can use the other kind too I think. Roast the pumpkin in a high oven similar to how you would a potato then blend the chunks of pumpkin (without the skin) in a food processor or you could maybe mash it with a potato masher.

    I was thinking about making a pumpkin pie myself bit this is way easier so I'll prepare it Wednesday night so we can have it for Thanksgiving.

    I really love how well spoken you are in the intros and outros of your videos. I always find that part to be the most challenging for me in my videos and I dread doing it hahahaha. This recipe looks super amazing and I look forward to making it! Your videos have really given me great ideas for what I can make for my co-workers as their holiday treat (I was thinking of making these into little bite-size muffins 😋). One question tho: Would you say that adding crushed or sliced nuts, like pecans, to the dough before baking would be a good idea? I always like to add nuts to my banana bread so figured that'd be something yummy to do here too.

      I would use a fruit or vegetable puree/paste or replace with a vegan plant based milk because I don't want to consume too many foods/recipes with coconut oil due to the high saturated fat and the increased risk of heart disease.

      It doesn’t taste like ginger it tastes like cinnamon and Fall spices but the fresh ginger really makes it bright and pumpkin-y ☺️💚 let me know what you think if you give it a try!

      You can leave out the ginger if you want or sub a little bit of ground ginger instead for a more balanced flavour.

    Hi Nikki, I need an advice making gluten free pumpkin bread, I already made two batches in two different days using 1 to 1 gluten free red mills flour and what I get is the whole crust gets to cook but the inside nothing I set it at for almost 1.5hr and still nothing. I don’t know what I could be making wrong thanks in advance for your help and thanks for the video 🙏🏽🙏🏽🙏🏽

      I haven’t made it with gluten free flour but bobs red mill 1:1 would probably work well!

    I can't use regular flour can I use any other kind almond coconut ?

      I haven’t tried it with those but in my experience those flours are very dense because they’re finely ground almonds and coconut so the cake with be heavy and maybe too greasy if you only use those. Maybe a mix with a lighter more absorbent flour like brown rice flour or oat would work well. Let me know how it goes ☺️

    Wow...thats why we use gram and ml here, because it doesnt matter how densly packed anything is...on a sidenote, ever thought About putting metric measurements in your recipes? honestly thats the reason that keeps me from trying any of your recipes...because our butter here is for example 250gr and it sucks to Google each measurement

    I don't really understand why you say salt adds a buttery flavour. It doesn't. With baked goods, salt adds balance. It literally balances the sweet aspects. -- Because baking IS a science.
