Mango Lamington Roulade
For Roulade Base:
Flour 100 grams
Caster sugar 60 grams
Eggs 6
Milk 80 grams
Oil 60 grams
Mango essence 1/4 tsp
Lemon Juice 1 tsp
Method:
Separate egg yolks & whites. Keep aside. Now in a big bowl add milk, oil, essence, egg yolks & flour. Mix gently. Don’t activate the gluten. In another bowl, beat egg whites with caster sugar & lemon juice until firm peaks. Now fold egg whites with flour mixture with soft hand until fully incorporated. Spread this mixture in a lined Swiss roll tray then level it with spatula from top. Bake it at 160 c for 20 minutes then increase the temperature to 170 for further 10 minutes. Remove from oven and use accordingly.
For The Filling:
Whipy whip cream 120 grams
Mango chunks 100 grams
Method:
Whip cream until stiff peaks then spread it on Swiss roll and top it with chunks before rolling into a log.
Keep it in the chiller for 2 hours before final coat on top.
To Top The Coat:
Mango jelly powder 1 packet
Warm water 1 cup
Chilled water 1 cup
Desiccated coconut as required
Method:
In a bowl mix jelly powder with warm water until fully dissolved. Add in cold water to maintain the temperature.
Pour this in a broad dish to work easily.
Now soak chilled roulade in this jelly mixture for few seconds and instantly coat with desiccated coconut.
Let it set in the chiller for 30 minutes before decorating & serving.

Rainbow Cake
For Cake Batter:
Flour 120 grams
Butter 75 grams
Caster sugar 150 grams
Baking powder 5 grams
Milk 75 grams
Eggs 2
Salt a pinch
Vanilla essence 1/4 tsp
Food color as required
Method:
In a stand mixer bowl beat egg whites with sugar until stiff peaks.
Add in egg yolks & essence. Give it good mix.
Now add all dry ingredients with food color.
Then add in Luke warm milk & melted butter.
Mix gently for few seconds and pour this batter in a lined 9” cake pan.
Bake it at 170C for 25 minutes.
For The Frosting:
Whipy Whip cream 400 grams
Cream cheese spread 100 grams
Cream cheese 100 grams
Icing sugar 50 grams
Method:
In a deep bowl mix together both cheeses & icing sugar with spatula. Keep aside.
Now whip cream until stiff peaks then start mixing gradually in cream cheese mixture with the help of spatula.
Keep it in the chiller for 1 hour before using.
