i heard there can be grease fires from the butter dripping on to the drip plate did you have any problems when the prime rib was cooking at 500 degrees?

Did this recipe this weekend on my 590, and it turned out amazing. Only 1 problem though....How do you keep from the butter melting down on to the drip tray and flaring up while it is cooking at 500? Seemed like most of the smoke I was getting was from the butter burning on the drip tray. Also, set mine at 450, but even that seemed too high, as the outside was getting very dark after only 20 mins.
I will be doing this on Christmas Eve. Do you have any suggestions on what to do with it when traveling? I will have to drive about an hour. Instead of tenting it, should I wrap it tight for the drive?
I have the 590 and will be trying this on a 12 pound rib roast, for Christmas. Any tips on how long i can expect it to cook, as I don't want it done too early or too late.

Thanks! This was an 8 lb. prime rib, so a 6-7 lb. will take around the same amount of time! As always, we're mostly cooking to internal temperature which is 125ºF for this prime rib. If you don't have Ben's Heffer Dust, any salt/pepper/garlic mixture is delicious on beef! The probes on the RT-700 will measure the internal temperature perfectly until you're ready to pull it off and tent with aluminum foil. Let us know how it turns out! 🤘🔥

Right about 2 hours and 30 minutes but you have to pay attention to internal temps. 125ºF is when you want to pull it. Let it rest for the internal to keep coming up.
Just a heads up - don’t do 500 degrees on the RT340. Tight spaces plus hot butter equals fire. Just had to extinguish a 14lb roast. It was on for 20 minutes.
It is perfectly safe to grill at 500ºF on the REC TEC. A few things you can do to prevent flareups from happening: Make sure you sear on the right hand side near the drip bucket. Make sure your grill is level or lower on the right hand side to ensure proper grease drainage. Make sure your drip pan is cleaned before high heat cooks and has clean foil. @@recteq Just wanted to come back to this. I attempted again for New Years, went with a smaller roast, 9lbs vs 14lbs and I used slightly less than a full stick of butter. Also adjusted the temp to 450. Results were spot on this time. All in all the RT340 worked perfectly, and the mistakes were mine. Huge roast, too much butter, too hot. I think the easy answer is just get a RT700 as well!

Total cook time was about 3.5 - 4 hours. It took about 3 hours after turning the grill temperature down to 275ºF. Any all purpose rub with salt, pepper, garlic powder, onion powder, and paprika in it will be a perfect substitute for Ben's Heffer Dust! 🔥

Why do the 500° sear in the beginning and not the end? Is there a reason for that method? I followed this and the Bull would not come down in temp and it ended up done about an hour early.
@@kc9740 I tried that, but then it starts to drop to low and then dumps even more pellets in. I kept having to try and fan the lid.. a lot. My next solution is to leave the lod open and turn it off for about 10 minutes and then restart at 275.

*****BE CAREFUL WHEN USING THIS RECIPE****** My wife read the reviews and we made sure the RT 700 and the drip pan were clean to avoid the mentioned fires. On Christmas Day I preheated the grill to 500* and put the 7lb standing rib roast on for 35 minutes. When I went back and opened the grill after 35 minutes I had a huge fire. The butter will catch on fire and flare up when the grill is opened. I use many Recteq recipes however I will not be using this one again.
When you dial it back from 500 to 275 do you close the lid and let it come down on its own or do you hold the lid open for a while until it cools to the the lower temp?

5minutes @ 500f per pound. So my 15.77 pounder is gonna be 78minutes at 500f... that ... "feels" like a long time.. so I'm going to ask for confirmation..:) Then for estimation.. we're probably talking another 4-5 hours at 275f? Will pull at 125/130f as our guests don't like it as pink as I do..
The 5 minutes per pound is just a good rule of thumb. Use good judgment with a larger piece of prime rib. Let it go until the outside is pretty, then turn the temperature down. I would check the internal temperature after the 3rd hour and gauge after that. You don't want to overcook it! 🤘🔥
I personally would cut those big boys in half and cook two. Then you get done faster (with more even cooking) and you get 4 flavorful crusty ends. With the bigger roasts, your ends might end up well done trying to get the middle to medium rare.
I tried this one my Recteq 340 last weekend. I came to check on the meat about 20 minutes into the cook only to find a massive grease fire! My grill was recently cleaned, the meat was placed directly in the middle of the grill, so I don't know what happened. Ruined a really expensive cut of meat - so if you are going to this method in this video (which I would NOT recommend), make sure you keep a constant eye while cooking.

I had no flare ups. Everything went well for me on that cook. I’ve had my grill for over 2 years now and never had a flare up

How would you go about getting the outside as pink as the inside? Would tying it up do the trick?
Less heat! When you go to turn the temperature down from 500ºF, reduce it to 225ºF instead of 275ºF! 🤘

@@recteq Gotcha. Just trying to plan out the start time. Why the loose foil tent instead of wrapping in foil during the rest?
The tent allows the meat to rest in the air and cool evenly. Wrapping would cause the meat to steam.
So 20 minutes per pound roughly after the switch to 275?

Made my first prime rib and it was ok. The crust was wayyyy too salty,. I used himalayian the night before and it got too salty.
Is the butter salted or unsalted?
Butter was salted, but unsalted will also work! 🤘
Unsalted should always be used when baking/cooking. Salted is perfect for finished foods(veggies, potatoes)

From recteq’s other comment. Total cook time is about 3.5-4 hours for 8lb. Allow time for resting afterwards.
DO NOT USE THIS RECIPE.. I followed it to a T and it caught my 700 on fire.. very pissed
