Yes, those anchovies are salt cured, the sardines are cooked, usually in the can once closed… some companies cook them different, like before they are in the can, but that’s rare… they do now make what they call white anchovies that are cooked in the can just like sardines are and they are not so salty… the salt cured anchovies like you all tried are usually an ingredient. Mixed with other stuff, rather than eaten alone! :0)
I love them both. Sardines on toast, or sardines with potatoes, or just sardines out of the tin with a fork. Anchovies are great too. I love them as a sandwich or in pasta.
Been eating sardines since early childhood 40 plus years ago. Years ago they didn't come with a pull tab on the can, they used to come with a metal rod that allowed you to roll back the lid. If you want to taste some really good Sardines check out the Santo Amaros in Tomato Sauce..some of the best I've ever had.
Those Centos are "pizza anchovies" meant to be used as a spice or seasoning, not on crackers as a thing in itself. For an anchovy meant to be featured in a dish try Patagonia brand. They're larger and generally not salt cured, come in different flavored oils and/or smoked. Same with sardines, you get what you pay for. Spanish or Portuguese tinned fish is delicious, and these countries have raised it to an art form. I personally prefer the ones packed with preserved lemon or are a little spicy with chilis. All tinned fish are packed in the can along with spices, if any, and then cooked.
The sardines just have too much mustard. Anchovies, never had them and probably never will. Maybe u guys should try different brand names because sardines are good and good for u, especially the in olive oil.

Both are things we never would have bought before our review page. Happily surprised, the sardines were very tasty!

Sardines are cooked about 3 times processing
Canned fish are cooked at least twice; most three times. Get anchovies that aren’t salt cured. Really good. I eat sardines several times a week.
