- In the second episode of Pasher Barir Ranna with @SalmaTheChef, Salma cooks a spicy liver "kosha"-a style of cooking where the meat is slowly braised, leaving a thick sauce in the end that coats the meat (liver in this case).
Salma learnt this recipe from her mother-in-law.
This recipe can be cooked with any liver-red meat or poultry-but with poultry she advises scaling down the quantities of spices, and onion-ginger-garlic by about 20% of her recipe. The cooking time for chicken/duck liver will also be lower.
What sets this "mete" or liver kosha apart from a Bengali "mete chochchori" is the absence of potatoes, and the addition of roasted cumin-coriander powder. Salma also chooses to not heat the mustard oil to smoking in order to preserve the pungent mustardy flavours of the oil in the dish. It really lends this liver curry a distinct flavour.
Salma most commonly serves this with plain boiled rice. But the leftovers can also be eaten with rooti.

We make this recipe in a pressure cooker adding coconut milk, bottle Gourd, onions, tomatoes, potatoes , green coriander, green chilli, Garlic and ginger, (Chutney) and then adding red chilli powder, turmeric powder, coriander powder, cummin seeds powder, salt, gram masala and lemon juice, just try this way also it's very delicious recipe & tasty also 😅😅😅

Yes, time and patience, but also even cooking of the onions so that they turn cohesive.

The liver kosha would likely go great with poriyal or thoran (different kinds of what's basically a South Indian way of stir-fried veggies, unsure what the Bangla or Bengali versions are called) as a rice killer

Tips: Soak it at room temperature milk or Butter milk for 30 min before cooking to reduce Pungent taste of the mutton liver and avoid hardness.

In my experience, mutton liver becomes hard and rubbery if overcooked.
Thank you for your comment. Yes, definitely if we overcook the liver then it will become hard. But we do need to cook the liver properly and for that we need sufficient time. Then only the raw smell of the liver will be eliminated.
