Chef RV’s EASY FRUIT CAKE

- EASY FRUITCAKE
250g salted butter, cut into cubes
200g brown sugar
4 pcs. whole eggs
250g all-purpose flour
150g walnuts, coarsely chopped
200g dried cranberries
100g green glazed cherries
100g red glazed cherries
100g apricot, coarsely chopped
100g prunes, coarsely chopped
1 tsp. all spice or pumpkin spice
Rum syrup:
½ cup dark rum
¼ cup dark brown sugar
½ cup pineapple juice
As needed:
bottle of dark rum
all purpose flour
whole walnuts
glazed cherries (red and green)
dried apricots (halved)
Greased and lined 9” round pan
honey for glazing

My aunt used to start baking fruitcake in June and she age them in the ref and bast them with rum and or cognac weekly. Sadly fruitcake has a bad rap in the USA as being cheap and not as appreciated like in the Philippines. I miss my Tita’s fruitcake.

First off, Chef RV maraming salamat po for this lovely fruitcake recipe! As always you are so kind and generous in sharing the best cooking and baking tips. I will respectfully say that in the U.S., unfortunately, fruitcake has always had a bad rap. Pero in life, ika nga, beauty is relative and subjective. Some people like it, some people don't. I have always liked fruitcake because it brings back childhood memories. Merry Chritmas po to everyone!!

i also didn't like fruit cake as a kid. but over the years, i've grown to love it. thanks for this recipe! the holidays won't be complete without it. oh, and i like keeping fruit cake in the fridge for even up to a year. mas sumasarap habang nagtatagal. at di naman ako nalalasing hahaha. =)
ako din nung bata pa my late granny used to bring it home sometimes, e di ko maxado bet kasi cguro nga dahil sa alak, pero ngaun umiinom n ko ng alak bet ko na xa hahaha
