The La Marzocco KB90 Commercial Coffee Machine

- We were lucky enough recently to have the new La Marzocco KB90 sent to us on loan for a short time thanks to La Marzocco Australia. While it was here we underwent some intensive training on servicing the machine plus we held our very own industry night to allow local roasters and cafes check it out. The KB90 is a really nice machine with some fantastic technology built into it which Luke will talk you through in this video.

Hello there, love your videos! How much of a difference does the ABR feature make during the service? Is it essential in order to achieve the highest degree of consistency during every shot or is it more of a marketing gimmick to spend the extra money on the feature and volumetrics are more than adequate?
Fun part I have no idea with all the coffee things and im opening a café shop in 2 week lol 😅

When locking in the portafilter into the group head it seems kind it's pretty rough when it locks in.. Question, does it mess up and break the puck with it slamming in or does not?
no its ok, it sounds very clunky but its not disturbing the coffee from what we found
i worked on one of these and i seen someone slam portafilter in group head hard and it would cause channeling
In Manchester yesterday and had a cappuccino (which was excellent by the way) in Ezra & Gil Coffee house they by the look of it are using this machine, probably why they are well regarded.

great video mate, what size porta basket are you using for the 22.5g shot, is it generally ok to put more ground into a basket than the size on the basket states, say 20g into an 18g basket? thanks
I love that portafilter connection. Do you think this feature will eventually make it down to prosumer machines?
Yes it’s a great concept, sure it will get there one day, currently it would be too expensive given the service parts swap kit would be approx $1000.
QUESTION: KB90 vs Tempesta from Astoria what are you opinion?

What is type and size of baskets are using in the portafilters??
We only use 58mm baskets that are the VST 21g 👍🏻 makes a solid coffee 👊🏻

If you have lots of volume not so much, it’s a lot of work for a coffee to do ABR on a volume machine. It’s more popular in overseas where the volume is low. In Australia the volumes are high and it would slow service down

I have notice when you insert the group head to pull a shot it looks like there is a major knock and can make a channel on the coffee ground?
It’s a click in to the yoke, then the piston comes down to meet the handle and you can see the handle move a little.

The grinder we're using there is the Anfim SP2. It has a scale holder option which we have and we are using Acaia scales with it. The little dosing pots are very hand and here's a link for you: www.decor.com.au/product/decor-go-dip-tubs-75ml-set-of-6-3/

If you have to tare the handle on the scale before each shot, why does it matter if all the handles are the same weight?
You can weigh each handle as per the ABR. If you use the mass mode you have to Tare the handle every time when weighing your dose in, so a matched handle save you time

Sounds impossible each group can have different Temperatures... Try run each one and have a temperature of each one checked.. I doubt one can have temp of 70,80,90celsius
The machine has a seperate boiler for each head. And another for the hot water and steam, so it’s a 4 boiler machine
the scales broke within a year of cafe use and the little magnets in the scales are a pain, plus one of the group heads would purge before the potafilter was took out making a mess, i wouldn’t recommend this machine because of those things
Yes the magnets can come out, they are now held in by a small grub screw, the flush can be changed to on/off if needed. Sounds like a setting issue.
I am puzzled to see, and not only in this video but also in a myriad Instagram posts and other visual material from Australia the cups being upside down. Why? It goes against all rules and recommendations as the rim of a cup can be very hot and burn your lips and tongue.
💯 you have to have very well trained staff and great beans to be able to make the most of the machines capabilities. The cups face down as we don’t have cup warmers in Australian machines. There is no need. The other reason is if you face them up an insect or foreign object or dust will settle in the cup and may end up in the customers cup. 👍🏻

I hope my barista doesn’t stick his bare fingers all over my coffee in the process of “distributing” it in the porta-filter every time 🤢
it happens more than you may like to know, but its the same as a chef, they touch you food!! we all hope great hygiene in followed.
