Killing it with the videos! 100% agree with everything you just said. Less is definitely more. I’ve ridden the ACA Sierra Cascade route and have been backpacking since I was in elementary school. I ran into a lot of thru hikers on the PCT on my ride south on the Sierra cascade route and it was always fun picking their brain about gear. Those humans have got ultra light figured out. One great tip I learned was to use a hose gasket on your sawyer purifier instead on the foam one it comes with. Last pretty much forever. Keep the videos coming dude!
Nice kit. Interesting quilt. Back in 92 I bought a MacPac (New Zealand brand) sleeping bag for around Australia motorbike trip through the deserts. The sleeping bag had no down on the bottom just a pocket for a sleeping mat to slip in. It was a fantastic idea, and the sleeping bag was half the size of a traditional bag. I still use it. I was surprised that hardly any other manufacturers picked up on the idea.

There is a difference in “pads” vs “air mattress “. The former offer better insulation with a trade off in volume as compared to air which can give better elevation from rough ground. All my pads are more than twice the volume of my air mattress’s so it becomes a hassle packing them. They are usually bungee on a back rack while my air pads can be inside a pannier. For that reason when flying with my gear I don’t take pads, take up too much space!

I lived in South Africa for most of my life and camping was a problem due to snakes seeking body warmth - there was the possibilty of waking with a snake inside your sleeping bag. What do you do - I live in AZ and have had my run ins with rattelers - what is your experience?
In American SW I haven't really had issues with snakes while overnighting (have spent only about 300+ nights so maybe not a large enough sample size)...
I was backpacking in Camp Verde had a ring tail chew my back pack in half. To get to some trail mix. Got back from a night hike to camp saw it run up a tree piece of it in its mouth.
Do you have any suggestions about which bikes can work? There are obviously bikepacking & touring bikes, but what about making a trail or enduro bike work? The bike you have...

It's pretty popular in the ultralight backpacking world now, but those guys sound way ahead of their time!

Use the bike you have. I prefer rigid hardtails, but any bike can work.
Hey hey - what bug bivy are you using? And do you carry a tarp or something for rain, or is totally weather dependent?
My bivvy is now discontinued. It was made by titanium goat, who is now out of business. I bring a shelter I'd there's rain in the forecast
