Lots of singers do this, uhm my *guess* is for two reasons- when you reach a height in volume distance from the microphone mitigates it and keeps it from blowing out the microphone and keeping the levels steady. And the second reason could be that its a sort of natural response when singing, you're allowing a LOT of air to escape and your cords are no longer resisting on those big belts so a physical gesture of allowing the head to extend could psychologically aid in that release of sound.
I just love it when big stars whip out a flute on national TV.
Alanis has great depth to her soul, and deep compassion and understanding as well.
