Recipe ingredients :
1. Dahi aloo / मट्ठे आलू रेसिपी ingredients :
Potato - 500 grams
Water - 1 & 1/2 cup
Fennel seeds - 1 Tbsp
Black pepper balls - 1/4 tsp
Ginger - 2 inch
Green chillies - 2 no’s
Curd - 1 cup
Water - 2 cups (adjust consistency)
Oil - 3 Tbsp
Cumin seeds - 1/4 Tsp
Turmeric powder - 1/2 Tsp
Coriander powder - 1 Tsp
Red chilli powder - 1 Tsp
Garam masala - 1/4 Tsp
Salt - 1 tsp (add at last)
Coriander leaves - 2 Tbsp
2. Puri ingredients :
Wheat flour - 2 cups (400 grams)
Salt - 1 Tsp (As per taste)
Oil - 1 Tbsp
Water - 1 cup (as per requirement)
Oil - for deep frying

Thank you 👍🏻 If you add salt early, it can make the yogurt curdle because it draws out water from the potatoes and other ingredients. This extra moisture, combined with heat, can cause the yogurt to split. Adding salt at the end helps keep the yogurt smooth and creamy. ☺️👍🏻
