    Growing up we didn't have a lot of money, but my mother wanted us to have a wide range of culinary experiences - so she did what she could. I still vividly remember her bringing home ONE artichoke. She told us all about it while she cooked it and made a sauce, then we gathered round and each of us kids took turns pulling one leaf and dipping it, until we'd polished it off. Then she divided up the heart so we all got a taste!

    Artichokes were a delicacy in our house. Dipped leaves in melted butter, butter/lemon mixture, mayo, or mayo/lemon mixture. 🥰

    Julia didn't realize that one of the best parts of the artichoke is the stem which she just broke off and discarded. Peeled and cooked alongside of the artichoke it is every bit as tender and flavorful as the heart.

      Yes. My family had artichokes served with most of the stem. I then served them when I had my own family. They are such fun to eat!

      Yes, but the fibrous part of the stem goes very deep. If you look at the cut end of the stem you will see only a little pencil-thin core of tender flesh in the stem. If I have jumbo artichokes, I will peel and cook the stems and eat them as a kind of appetizer because they cook much faster than the whole artichoke, but if I don't have jumbos, I don't bother.

      I too have always eaten them but while looking for recipe ideas was surprised by a post cautioning against eating them for possible poisoning😳

    Okay, this is embarrassing! In 68 years I didn’t know to wash out the cheesecloth before using it. She is such a good instructor too. I now wouldn’t be afraid to cook artichokes (if they weren’t so outrageously expensive)!😊

      I bought them for Thanksgiving Dinner.
      $4.25 each. U.S. dollars
      We don't eat them as often as we did because of the price.

    My Mom used to make artichokes and dip the leaves in mayonnaise. I am wondering if she got that from JC. I don't like mayo, so maybe I could try it with butter.
    Can't believe they were only $.30 and she thought that was expensive!

    When I was a kid, my mom served us boiled artichokes with melted butter for dipping, and I found it not at all exciting. But later on a friend served me one with mayonaise, and I have been hooked on them ever since. And it seems that good quality jumbo artichokes nowadays appear in my market virtually every time of the year, so I eat them a lot.

      I love when she mentions the prices back then. She thought $.30 each was extravagant. Now a good deal would be $2 or more for jumbo. I wish they’d put the year of taping these videos.

    I learned to eat artichokes (with butter or mayo) as a teen. But hubby didn't care for steamed ones. But we went to a festival in CA (salinas valley) & I learned to only lightly steam the artichoke (till aldente) then cut in 1/2 & remove the choke & marinade for 1/2 hr in seasonings & oil. Then place on the BBQ - what a difference! My hubby only eats artichokes this way now! (With mayo)

And only when you get to the bottom, when you get to the heart of the artichoke, do you pick up your knife and fork.’ They couldn’t understand this at all. And I said, ‘Well, you try eating it any other way.’ But the yuppie is gone, and the artichoke remains.”

    When I was a kid, my mom boiled artichokes and served them hot with melted butter or cold with mayonnaise. My favorite part was drinking milk with them. They make the milk taste sweet and I always have to have a glass of milk to this day when I eat an artichoke.

    My grandma has made artichokes all the time, totally shaved, as a cold dish with olive oil, some vegetables and dill, I never liked them but it have a chance with mayonnaise here.😊

    $0.30 in 1963 is equivalent to $2.75 today.
    My grocery store is selling artichokes (in August) for $2.50

      I don't consider them expensive but they are awfully fussy to cook and eat. Many places near me have a bar featuring artichoke hearts, either marinated or just cooked. That's more expensive but so much easier.

      @@mikieanthony777 Feb, 1964. We had just gotten our UHF converter installed and Julia had become an entertaining Saturday afternoon "must watch." I remember watching this episode. Never ate an artichoke until almost 20 years later - wasn't all that impressed.

    I'm guessing this aired around 1965 or so. Julia said artichokes were expensive at 30 cents. Today the least expensive I could find was $2.74 each. Or, a little more than 9 times as expensive today over 54 years. In 1965 minimum wage was $1.25 and in 2022 minimum wage is $7.25 or 5.8 times more. Increasing minimum wage isn't the answer - what follows that is simply price increases. So.....

      Imagine if you were born before they could help with severe allergies and sinus issues. A little empathy for the person who had trouble with every breath and still had a full and helpful life.
