I like my grits made with milk and lots of butter. I usually double the batch to make squares for open faced sandwiches. The left over grits get quickly gets spread onto a greased jelly pan and once cooled cut into squares that will be crisp fried before topping - examples -Breakfast (topped w/fried egg & bacon bits or chopped sausage), Lunch or dinner (topped tomatoes, onions & okra, or black-eyed peas or pepper steak or shrimp gumbo). I had polenta cakes at a fancy Italian restaurant and had an "aha" moment...

My maternal family is from South Carolina and I loveeee grits dishes! 😛😋 I love cheese grits , sweet grits , and grits with catfish alongside black eyed peas.
In Thailand, there is a rice congee called โจ็กหมู่ไส่ไข่นะครับ---"joke moo sai kai." This is rice congee with pork and 'things' in it. The cooked rice congee is called "joke." If you ever get to Vietnam, Laos. Cambodia, Thailand, Taiwan, etc. show up and any eatery and ask for "joke." You will NOT be let down. It is considered farmer food. Costs about $1-2 for each bowl. Lasts all day! Extremely nourishing.

I’m telling you, this episode learned me plenty! (I know this is not proper English) in case any of my former educators are watching.🤣 I made fried catfish and grits last Friday night! No wonder they were a total match. I love yellow and white grits, but can only find white in Houston, and only quick grits. I would love to try some of the varieties mentioned in the show. Since it’s the holidays, I may as well treat myself! Also, I grew my first organic garden this year, and since that makes me an expert, I must find corn seed to try next year.🌽 Another amazing episode. Thanks Dr.

Ant Learn :) In Africa we have a lot of corn / mielies. So we eat a lot of cornmeal. The best is for breakfast where we eat it with slightly bigger pieces than creamy meal. This makes for a nuttier, yummier and far less processed bowl of porridge than having wheat. (And a lot fewer people are intolerant to it than to the gluten in wheat.)
My mother was born in Texas, moved to South Carolina then Mississippi. I was born in Ohio but grew up with grits. My next door neighbor got a scholarship to the University of South Carolina. We got him a carton of grits as a joke gift. He hated grits. When he graduated and came back home, he loved grits.

This was purposely done as I felt that not many people understood how grits and corn meal were made. There are plenty of shows that tells one how to make different dishes
I didn't grow up with grits but we made "corn meal mush" as an alternative to oats or wheat farina (or similar grains) when we ran out of those. I always loved the corn flavor, and finally got to eat grits when I was in my 20s and found stone ground grits to make at home in my 30s. Such a good staple food! Love learning more about the history of our food! ❤️

In Malawi central Africa,we call this "misele" we still eat this but it's mainly a breakfast we mix it with sugar or honey...the similarities!!
