I love meal prep. It takes a lot of energy out of me but that’s ok because it helps me preserve my energy during the week when I’m tired. I split a can of chickpeas and prepped falafel and chickpea salad (mock chicken salad), I also made 2 different types of vegetable curries, potato salad, homemade tzatziki and arancini balls using leftover Chinese rice, which are my naughty fried treats 😊

Kinda late bc I’ve been too busy to watch but I love the idea of a Sunday reset so much only that all stores are closed on Sunday and people get really pissed if you make too much noise so probably not happening for me 😂
