@@quaaaaaaaar Well I am living in Italy with my Italian family. We make our homemade tagliatelle this way, it’s not gummy and gross at all. If you check the recipe of other Italians and even Italian chefs here on TH-cam, you will see that they too use whole eggs. 😉

To make it without eggs, use semolina flour and water, to make it with eggs, use eggs and white flour
Can I just storage it right after I make it in the freezer without drying it?
I guess? Just make sure to put lots of flour so it won’t stick together.

How long should I let it rise?
It doesn’t rise actually. I don’t usually put anything to let the dough rise. It has only eggs, flour and a pinch of salt.

Yep. You may add salt if you want. But for me those 2 ingredients are always enough.
