Very tasty and interresting, I'm from Romania, it reminds me of a dish we make in the fall with mutton, it contains organs, meat, intestines and blood and is thickened with corn meal, we eat it with fermented vegetables and cornmeal porrige. It is very rarely done today. With pork we use the intestines to make sausage (blood sausage, organ meat sausage, meat sausage, head cheese stuffed in the stomach or bladder, black pudding). Cheers.

And then you fry in pig fat onions and slice the blood jelly and add over the onions and red wine, some salt and spices like marjoram, black pepper and hot paprika snd cook until blood is done and the gravy thickened, like 15 minutes. Since my family does not keep pigs, we have made it a few days ago with goat blood. Also we have a dish made from pork similar to what you made without the intestines and blood, with pieces of meat, fat, tongue, liver cooked like you did with wine, onions and a lot of garlic called "pomana porcului", literally the pork's funeral dish. Since we live in an area with very cold winters, usually we preserved the cooked meat in pots covered with it's own fat. Or we salt and smoke the rest like ham, belly, sausages, feet. It's always interresting to see other cultures and traditions and how we differ and at the same time how similar we are. Best.
It looks tasty but I doubt that u didn't boiled the intestine with lemon leaves in order to get rid of the bad smell coz the intestine smells very bad.
1 hour is too much bro we don't put the blood directly after cooking the meat for atleast 50 min then we put the blood and cook for around 25 to 30 min in high flame

Cooking blood only for 15-20 mts that's gross, you should cook it atleast for one hour. Mark my word, the longer you cook, the more tastier.
