- Dak bungalow chicken -
Its a colonial lost recipe from the days of the British. Unfortunately dak bungalow cuisine is a near forgotten culinary treasure. Dak Bungalows were the rest houses where the British officers used to take rest on journey. Or used as a night stay during hunting trip. In these Dak Bungalows or rest houses a Khansama or Orderly used to handle the kitchen. They generally used their own chicken or goat or the animals from their poultry to serve the officers.
The recipe is different from one dak bungalow to other depending on the availability of ingredients.
Dak bungalow chicken curry comes with whole boiled and fried eggs and potatoes in it and freshly ground spices.
A very flavorful dish which needs only simple marination and then cooking. The original recipe of chicken Dak Bungalow was chicken roast. Which is very light on spices and could be cooked with minimal ingredients and shortest of time. But these days restaurant made Chicken Dak Bungalow is much spicier and far from those real ones.
I have done my research with various sources & trailed multiple times to reach to this recipe. I think you will like the outcome.

Thanks for sharing this. Please let me know what if we make all the paste items together bcz we are using them at the same time. So what is the reason of making every masala paste separately? Does it compromise the authenticity of taste?...
Different condiments release their aromatic oil in different temperature and in different smoking points and hence the sequence. You can of course grind them all together and use at a go but that may not and you to the desired result.
